Learn butchery techniques with a demonstration from Twine butcher and owner, Steve Diehl. Throughout the demo we'll review anatomy and cooking tips; learn how to break down, debone and skin properly; and discuss sourcing pasture-raised beef sustainably in today's food system. Learn where your favorites cuts sit on the animal, and discover pieces you never knew existed. Nothing connects you closer to your food quite like this experience.

This event will include a mezcal tequila tasting by Lirette Selections. Sample portions only. Mezcals are spirits distilled from the agave plant after they’ve been smoked in a palenque underground. These authentic Agave spirits that go great with meats!

Siembra Azul Tequila Blanco - Siembra Azul (Blue Harvest) is a small-batch, artisanal, tequila made from only the finest blue agave in the Highlands of Jalisco, Mexico. The highland terroir creates approachable, fresh tasting tequilas.

Siembra Valles Tequila Blanco - Due to the characteristic terroir of this region, tequilas from the Valles, overall, have themes of minerality, notes of pepper, and are more robust.


Rey Campero Espadin - This is a surprisingly floral and delicate example of this type of mezcal, with aromas of lily of the valley, grapefruit rind and green pepper greeting the nose. The palate is light and fruity, with pineapple, ripe grapefruit, lime and vanilla. More floral flavors and hot chili spice play off each other to add a subtle accent to the finish with just a hint of charcoal smoke.

Light food samples also provided, no meal service.
